Notes of roasted ground coffee, mineral, earth and stone, hints of graphite followed by scents of cocoa bean, rhubarb and gentian root, a whole spectrum of olfactory complexity. The flavour is characterized by a slightly sweet taste accompanied by bitter chicory plant, wet tobacco leaf, cocoa bean and green wood nuances.
Its marker is the homogentisic acid, which is not present in any other honey.
In combination by affinity with Jerusalem artichokes, thistles, artichokes. Accompaniment to somewhat bitter coffees or teas. Raises seductive sensations when playing with different percentages of dark chocolate. A perfect honey to indulge oneself directly from the spoon.
