Fir honey vinegar is made from the dark honey of the fir tree. On the palate, the taste is full-bodied and malty, with pronounced notes of honeydew. The barely perceptible sweetness gives it balance and roundness, while maintaining the typical character of a tangy vinegar.

Pairings and uses

Fir honey vinegar pairs well with fresh vegetable salads and preserves. It can be used for pickling, in garlic-based dressings, and in the preparation of horseradish sauce. When reduced—two parts fir honey vinegar and one part of the same honey, simmered for 30 minutes—it complements roasted red meats, boiled dishes, and fatty fish, as well as a fior di latte ice cream, drizzled on top. It enhances fish recipes in carpione and gazpacho, and is an excellent thirst-quencher when diluted in cold water.
Also available in spray format, it is ideal for adding a fresh and delicate touch to dishes like fried eggs, boiled dishes, and steamed vegetables.
