Fir honey vinegar is made from the dark honey of the same plant. On the palate, the taste is full-bodied and malty, with pronounced notes of honeydew. The barely perceptible sweetness gives it balance and roundness, while maintaining the typical character of a tangy vinegar.

Pairings and uses

Fir honey vinegar pairs well with fresh vegetable salads and preserves. It can be used to prepare pickles, garlic-based dressings, and horseradish sauce. When reduced ‒ two parts fir honey vinegar and one part of the same honey, simmered for 30 minutes ‒ it complements roasted red meats, boiled dishes, and fatty fish, as well as a fior di latte ice cream when drizzled. It enhances marinated fish recipes and gazpacho, and is an excellent thirst-quencher when diluted in cold water.
Also available in spray format, it is ideal for adding a fresh and delicate touch to dishes like fried eggs, boiled dishes, and steamed vegetables.
