Description

The Alpine Flowers Honey is a “meditation” honey with an amber color, sometimes darkened by the presence of honeydew. Its varied nectar origins, with rhododendron, raspberry, linden, and thyme, are reflected in a rich and varied bouquet.
On the nose, it recalls the stem of the thistle and boiled artichoke, with an elegant and decisive aroma in which notes of cinchona and rhubarb emerge; on the palate, it reveals a slight sweetness that evolves into a long, fresh, and vaguely mentholated finish, capable of harmonizing all sensations.

The result is a refined and complex mountain honey, carrying the nuances of the rich alpine botany.

Pairings and uses

The Alpine Flowers Honey pairs well with dairy products from mountain pastures, especially aged alpine cheeses, and yogurt.
It can be used in game cooking bases, to flavor the cooking water of spinach, chard, and asparagus, or in fresh fruit salads and smoothies.
At the end of cooking, it enhances vegetables seasoned with delicate spices.

Plant variety

The Alpine Flowers Honey is derived from the collection of nectar and pollen from numerous botanical species that populate the Italian hills, including Fabaceae, Asteraceae, Rosaceae, Brassicaceae, Boraginaceae, Apiaceae.
In Italy, there are over 6,000 plant species, many of which are concentrated at high altitudes, giving this honey particularly complex aromatic profiles that vary depending on the season.
Bees play a fundamental role in pollination, establishing a mutually beneficial relationship with flowers: bees obtain the necessary nourishment, and many plant species reproduce only thanks to their presence.

Accompanying pollens

Raspberry, plants from the Ericaceae group (rhododendron), vetch, honeysuckle, sainfoin, thyme, wild thyme.

These are the possible nectars (belonging to other botanical species) present in the honey in a reduced percentage.
