Description

Apple honey is a rare honey, especially in its pure form, despite the widespread blooms throughout Italy. It appears hazelnut-colored with gray-green reflections and a fine crystallization.
On the nose, the first notes are apple cider and apple blossom, followed by hints of grass sap, moss, and baked renetta apple; on the palate, it reveals an incredibly gentle taste texture that opens on flowers and vegetables, then defines more pronounced nuances of thistle and boiled artichoke.

The result is a precious honey, surprising for the delicacy and complexity of its nuances.

Pairings and uses

Apple honey pairs well with meats, particularly game, cooked fruit compotes, and quince mustard.
It can be used in brining poultry, seasoning roasted pork, and dressing a salad of spring field herbs.
It enhances cocktails based on calvados, cider, or apple spirits.
Combined with horseradish, sweet mustard, sesame, and hard-boiled egg cream, it creates a soft and alternative mayonnaise to accompany asparagus.

Plant variety

The apple tree is a small deciduous tree reaching 5-12 m in height, characterized by a dense crown and a shallow root system.
Its flowers, with a delicate white-pink coloration, have a pentamerous symmetry.
The genetic complexity of the apple tree was deciphered only in 2010 thanks to the work of 85 scientists, coordinated by the Edmund Mach Foundation of San Michele all’Adige, who sequenced its genome composed of 13 billion nucleotides.
