Description

Cherry honey is a deep yellow color, illuminated by bright orange reflections.
On the nose, it releases hints of toasted dried fruit and apricot jam; on the palate, it evokes the sweetness of drupes, with clear notes of almond and plum.
After tasting, the mouth remains enveloped in a pleasant richness, enriched by toffee notes, while the finish is almost pungent, characterized by benzaldehyde, the typical aroma of stone fruits.

The result is a velvety and bold honey that combines softness and aromatic intensity.

Pairings and uses

Cherry honey pairs well with robiola, sweet aged cheeses, and alpine tomes.

It is suitable for pastries, in sbrisolona cake or in a mascarpone cream enriched with chestnut pollen and peeled almonds, and can also be used to flavor sauces based on sour yogurt and caponata or to glaze almond chicken.

Altitude distribution: 400-800 m.
Flowering period: April to May.

Plant variety

The cherry is a tree belonging to the Rosaceae family, native to Europe and some cold mountainous areas of Asia Minor.
In Italy, it grows spontaneously from high-hill areas to mountainous ones, showing good cold resistance.
It has small nectar glands at the base of the leaf stalk and, if injured, emits a gelatinous resin that protects it from infections — once used to flavor chewing gums.
Together with
Prunus cerasus, it is the basis of cultivated varieties from which prized cherries like the Piedmontese white graffione and the black durone of Vignola are derived.

Accompanying pollens

Willow, maple, hawthorn, chicory, crucifers.
These are possible nectars (belonging to other botanical species) present in the honey in a reduced percentage.
