linden

Description

Linden honey is white in color, with pleasant golden reflections, and owes its characteristic aroma to the complexity of over a hundred different volatile aromatic substances.
On the nose, it releases strong, chemical, almost medicinal aromas, with clear hints of flower and fresh spices, followed by scents of incense and resin; on the palate, it is refreshing, with notes of menthol, sage, and lime, and a strong aromatic persistence balanced in the finish between citrus and bitter.

The result is a honey that offers a fresh balsamic sweetness and a long aromatic persistence.

Pairings and uses

Linden honey sweetens tea, herbal and floral infusions, fruit juices, and light or low-alcohol drinks, like the bee’s knees cocktail.
It pairs well with dishes featuring sage, basil, or lemongrass, or with fresh sausage or goat ricotta.
It can be used in a butter, sage, and rosemary sauce for pumpkin or spinach tortelli, and in pastry, in ganache for extra dark chocolate pralines.

Plant variety

The linden is a tree of European origin present in Italy with two main species: Tilia cordata and Tilia platyphyllos. Characterized by a sturdy trunk and a broad crown, it adapts easily to different soil types and exposure conditions.

Accompanying pollens

Tree of heaven, chestnut, privet, acacia.

These are the possible nectars (from other botanical species) present in the honey in reduced percentages.
