Raspberry honey is characterized by a mother-of-pearl color, with occasional reddish hues. It is a very delicate honey, with a scent reminiscent of beeswax and cotton candy. The taste recalls fresh notes of acidic fruit intensified by balsamic hints.

raspberry
In the kitchen, raspberry honey can replace sugar in the preparation of a buckwheat cake with blueberry jam, or as an accompaniment to panna cotta with berries.
Exhilarating when used to help cream a risotto with local cheese and Golden apples.
Plant variety

The raspberry, scientifically known as Rubus idaeus L. (1753) and classified by Linnaeus, is a perennial shrub of the Rosaceae family. The scientific name Rubus idaeus derives from Mount Ida in Crete. Legend has it that the goddess Aphrodite, during a walk, scratched herself on a bramble, staining the initially white fruits red with her own blood, giving them their current color.
Accompanying pollens
Forget-me-not, sainfoin, rhododendron, stonecrop.
These are possible nectars (belonging to other botanical species) present in the honey in a reduced percentage.
