Description

Sunflower honey is a honey with great and often misunderstood qualities. Rich in glucose, it is distinguished by its unmistakable intense and warm yellow color, due to the pollen covered with tiny drops of yellow oil that give this honey its unique brilliance. On the nose, it releases delicate scents of pollen, freshly cut hay, pineapple, and passion fruit; on the palate, it is fruity and intense, with fresh acidic notes reminiscent of green tomato jam and ripe apricot, closing with an elegant aftertaste of star anise. The result is a honey capable of evoking fresh and tropical aromas in an original balance.

Pairings and uses

Sunflower honey pairs well with soups, vegetable purées, and broth. Emulsified with extra virgin oil, ground black pepper, and a few drops of soy sauce, it becomes an excellent base for ramen stocks and oriental soups. It can be added to vegetables flavored with delicate spices, drizzled over fried foods, or used in the preparation of sweet and savory batters. It enhances a fried egg as an alternative to butter or other seasonings.

Plant variety

The sunflower is an herbaceous plant that grows worldwide, on almost any type of soil. There are various cultivated varieties, both for ornamental purposes and for the seeds, used in confectionery, baking, or for direct consumption.
Sunflower oil is particularly rich in d-alpha-tocopherol (vitamin E), present in quantities four times higher than that of olive oil.
