The dish
This yogurt and thistle honey sauce is the ideal dressing for fresh salads and seasonal vegetables. The thistle honey, aromatically warm and floral with a slight astringent note, gives the cream a perfect balance between sweetness and liveliness.

Ingredients
- ½ white onion
- A few basil leaves
- 40 ml of extra virgin olive oil
- Juice of 1 whole lemon
- 30 g of thistle honey
- Salt and pepper to taste
- 250 g of whole plain yogurt
- A chop of chives or mint or wild garlic
Preparation
- Blend together the onion core, basil leaves, extra virgin olive oil, lemon juice, thistle honey, salt, and pepper.
- Combine the emulsion with the plain yogurt and add the chopped aromatic herbs of your choice.
- Mix carefully and serve over fresh vegetables for a light, aromatic, and refined dressing.
