alpine is a compote made from acacia honey, buds, and essential oils of mountain pine. The mountain pine is a needle-like plant that grows between 1,800 and 2,000 m in altitude. It does not develop a vertical growth due to the harsh mountain environment but lies on the rocks, allowing easy access to the terminal parts for collecting the buds, which are rich in resin. The use of mountain pine buds is a well-established tradition in the Dolomites’ pharmacopoeia, from which extracts, solutions, and ointments are derived.
