Description

Chestnut honey is produced from the blooms of wild mountain chestnuts and has composition parameters similar to honeydew honeys, despite being floral in origin.
Rich in minerals, it is distinguished by its characteristic amber color, sometimes intense and reddish. It crystallizes slowly, especially in the presence of bramble nectar.

On the nose, it releases scents of dried chamomile, enriched with animal, tannic, and quinine notes; on the palate, it reveals a slightly bitter, mildly astringent taste, with hints of wood, wet tobacco, carob, and cocoa bean.

The result is an intense and complex liquid honey with extraordinary versatility.

Pairings and uses

Chestnut honey pairs well with ricotta, soft cheeses, bloomy or washed rinds, and enhances the sweetness of Trentino grana.
It can be used in pumpkin tortelli filling, to accompany foie gras or delicately smoked foods. Warmed, it offers original contrasts in a persimmon mousse or blended with whipped ricotta.
It is also suitable for preparations with hazelnut and in baking with ancient or whole grains, such as rye.

Plant variety

The chestnut is a tree common in hilly and mountainous environments, characterized by a broad canopy and the ability to reach 20-30 m in height. It prefers fresh, deep soils rich in organic matter.

Although it is predominantly wind-pollinated, its flowers offer bees abundant nectar and pollen.

Accompanying pollens

Clematis, Canadian vine, bramble, white clover.

These are possible nectars (from other botanical species) present in the honey in reduced percentages.
