Heather honey appears dark amber in color, with red or orange hues of varying intensity, and is rich in insoluble substances that make it cloudy even when freshly extracted from the combs.

On the nose, it releases notes of baked and caramel, coffee powder, chamomile, turmeric, saffron, and apricot jam; on the palate, it fascinates with its originality: generous and complex, it is a moderately sweet and very persistent honey, perfectly balanced between aromas of toffee, tamarind, and a finish where bitter notes prevail.

Pairings and uses

Heather honey pairs well with sweet spices, particularly cinnamon and nutmeg, but also anise and chili pepper.
It can be used in unusual chutneys and jams, in Chinese fried rice, in curry chicken, or in sausage dough. Served raw, it enhances guanciale and cotechino.

It is the honey of alcoholic fermentations: lively in low-fermentation beers, mead, and bitter herb infusions intended for spirits.

Plant variety

Heather is a shrub or small tree typical of the Mediterranean region. It has numerous branches on which many flowers bloom in pyramidal clusters, white or pink in color. It prefers fresh, acidic, and slightly moist soils.
Its name derives from the Greek
ereikein, “to break,” referring to the fragility of its branches.
