sintesi is the best expression of our fermented products, a liquid icon that summarizes a long history which began on a whim in 2003 with our first experiments, as a further development after oxymel. sintesi stands for a melting pot of ideas, a vision of essential elements – water, honey and time. oxidized in small three-times-used oak barrels leaving some headspace, in an extremely dry environment, this fermented mixture of spring water, fir honey and citrus honey is a connubium of the alps and the mediterranean.
it pairs well with fine biscuits, blue cheese, aged and high mountain cheese in general. it makes for a drink in good company. recommended serving temperature: 10-14°C.
